  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil (preferably extra-virgin)
  • 2 tablespoons butter
  • 3 garlic cloves, finely minced
  • ½ cup chopped sun-dried tomatoes (about 75 g), oil-packed
  • 1 cup chicken broth (240 ml), preferably low sodium
  • ¾ cup heavy cream (180 ml)
  • ¼ cup chopped fresh basil leaves (about 1012 leaves)
  • ¼ cup grated Parmesan cheese (about 25 g)

Instructions

  1. Pat chicken breasts dry with paper towels and season both sides generously with salt and freshly ground black pepper.
  2. Heat olive oil over medium-high heat in a large skillet. Add chicken breasts and cook for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside.
  3. Reduce heat to medium. Add butter to the skillet and melt. Add minced garlic and stir constantly for about 30 seconds until fragrant.
  4. Stir in chopped sun-dried tomatoes and warm through for 1-2 minutes.
  5. Pour in chicken broth and scrape browned bits from the pan bottom. Simmer for 3-4 minutes to reduce slightly.
  6. Lower heat to medium-low and stir in heavy cream. Let sauce bubble gently for 4-5 minutes, stirring occasionally until thickened.
  7. Add grated Parmesan cheese and chopped fresh basil. Stir to combine and adjust seasoning with salt and pepper as needed.
  8. Return chicken breasts to the pan, nestle into the sauce, and simmer on low for 3 minutes to warm through and marry flavors.
  9. Serve chicken with generous spoonfuls of creamy sun-dried tomato and basil sauce. Garnish with extra fresh basil if desired.

Notes

Do not rush the sauce reduction to allow flavors to concentrate. If sauce thickens too much, add a splash of chicken broth or cream to loosen. Fresh basil should be added at the end to preserve its flavor and color. For dairy-free version, substitute heavy cream with coconut cream and omit Parmesan or use nutritional yeast.
