  • 2 tablespoons olive oil
  • 3 large garlic cloves, minced
  • 1/3 cup chopped sun-dried tomatoes (packed in oil preferred)
  • 1/2 cup chicken broth or white wine (120 ml)
  • 1 cup heavy cream (240 ml)
  • 3/4 cup freshly grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Chopped fresh basil or parsley for garnish

Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and 1 teaspoon Italian seasoning.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering but not smoking (about 2 minutes).
  3. Add chicken breasts to the skillet. Cook undisturbed for 5-6 minutes on the first side until golden brown. Flip and cook the other side for 5 minutes more until internal temperature reaches 160°F (71°C). Remove chicken and set aside, tented with foil.
  4. Lower heat to medium. Add minced garlic and sauté for about 30 seconds until fragrant.
  5. Add chopped sun-dried tomatoes and cook for 1 minute.
  6. Pour in chicken broth or white wine to deglaze the pan, scraping up browned bits. Simmer for 2-3 minutes to reduce slightly.
  7. Stir in heavy cream and bring to a gentle simmer. Add parmesan cheese gradually, stirring constantly until melted and sauce thickens (3-4 minutes). Season with red pepper flakes, salt, and pepper.
  8. Return chicken breasts to the pan, spoon sauce over them, and simmer gently for 3-5 minutes until heated through and sauce coats the chicken.
  9. Garnish with chopped fresh basil or parsley before serving.

Notes

If sauce gets too thick, loosen with extra chicken broth or cream. Tent chicken with foil while finishing sauce to keep it juicy. Use freshly grated parmesan for best flavor and smooth sauce. For dairy-free version, substitute heavy cream with coconut cream and parmesan with nutritional yeast or vegan alternative. Chicken thighs can be used instead, adjusting cooking time to about 7 minutes per side.
