These Creamy Overnight Peanut Butter Protein Oats are thick, custard-like, and packed with protein. With just 5 minutes of prep, you’ll have a delicious, make-ahead breakfast that keeps you full all morning.

  • 1/2 cup (40g) rolled oats (old-fashioned oats)
  • 1 scoop (about 30g) vanilla or unflavored protein powder
  • 1 tablespoon chia seeds
  • Pinch of salt
  • 1/2 cup (120ml) milk of choice (whole milk recommended for creaminess)
  • 1/4 cup (60g) plain Greek yogurt (full-fat recommended)
  • 2 tablespoons (32g) creamy peanut butter (natural, no-stir)
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Optional toppings: sliced bananas, extra peanut butter drizzle, dark chocolate chips, chopped nuts, cinnamon

Instructions

  1. Gather your ingredients and let milk and yogurt sit at room temperature for about 10 minutes.
  2. In a mason jar or airtight container, combine rolled oats, protein powder, chia seeds, and a pinch of salt. Stir with a fork to break up any clumps.
  3. Add milk, Greek yogurt, peanut butter, maple syrup, and vanilla extract on top of the dry ingredients. Do not stir yet.
  4. Stir vigorously with a fork or small whisk for about 30 seconds, scraping the bottom and corners, until smooth and no dry spots remain.
  5. Screw the lid on tightly and shake the jar for about 10 seconds to ensure even distribution.
  6. Refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  7. In the morning, check the consistency. If too thick, stir in 1-2 tablespoons of milk.
  8. Add desired toppings (e.g., sliced banana, extra peanut butter, chocolate chips).
  9. Serve cold or at room temperature. If preferred, microwave for 30-45 seconds, but do not overheat.

Notes

For best texture, use rolled oats (not quick or steel-cut). Let milk and yogurt come to room temperature before mixing to prevent protein powder clumps. The oats taste even better on day 2 or 3. For meal prep, leave toppings off until serving.
