Ingredients

Scale
  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 3/4 cup (95g) all-purpose flour
  • 1/3 cup (35g) unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 8 ounces (225g) cream cheese, softened
  • 1/2 cup (120g) pure pumpkin puree
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon (8g) all-purpose flour

Instructions

  1. Preheat your oven to 325°F (160°C). Grease an 8×8 inch baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the melted butter and 1 cup granulated sugar until glossy and combined, about 1-2 minutes.
  3. Add the 2 eggs one at a time, whisking each in thoroughly. Stir in 1 teaspoon vanilla extract.
  4. In a separate bowl, sift together the flour, cocoa powder, and salt.
  5. Gently fold the dry ingredients into the wet ingredients using a rubber spatula until no streaks remain. Do not overmix.
  6. In a clean bowl, beat the softened cream cheese until smooth using an electric mixer (about 1-2 minutes).
  7. Add pumpkin puree, 1/4 cup sugar, 1 egg, cinnamon, nutmeg, 1/2 teaspoon vanilla extract, and 1 tablespoon flour to the cream cheese. Mix until creamy and well combined.
  8. Pour about two-thirds of the brownie batter into the prepared pan and spread evenly.
  9. Dollop spoonfuls of the cream cheese mixture over the brownie batter, then add the remaining brownie batter on top in blobs.
  10. Using a toothpick or skewer, gently swirl the cream cheese into the brownie batter in a figure-eight or circular motion without overdoing it.
  11. Bake for 35-40 minutes, or until edges are set but the center jiggles slightly. A toothpick inserted outside the cream cheese swirl should come out with a few moist crumbs.
  12. Let the brownies cool completely in the pan on a wire rack before slicing.

Notes

Use room temperature eggs and cream cheese for smoother blending. Melt butter and let it cool slightly before mixing to avoid cooking eggs. Avoid overmixing batter to keep fudgy texture. Swirl gently to maintain a defined marble effect. Cool brownies completely before slicing to set texture. For gluten-free option, substitute all-purpose flour with almond flour. For dairy-free, replace cream cheese with coconut-based cream cheese and butter with coconut oil.
