A cozy and quick pumpkin spice protein overnight oats recipe with pecans that delivers creamy texture and a perfect balance of flavors, ideal for fall mornings or any busy day.

Ingredients

Scale
  • ½ cup (45g) rolled oats (old-fashioned oats work best)
  • ¼ cup (60g) pumpkin puree (canned or fresh)
  • 1 scoop (about 30g) vanilla protein powder (whey or plant-based)
  • ¾ cup (180ml) milk of choice (dairy, almond, oat, or coconut milk)
  • ¼ cup (60g) Greek yogurt (plain or vanilla)
  • 1 tablespoon (15ml) maple syrup
  • 1 teaspoon pumpkin pie spice (blend of cinnamon, nutmeg, ginger, and clove)
  • ½ teaspoon ground cinnamon
  • 2 tablespoons (15g) chopped pecans (toasted optional)
  • ½ teaspoon vanilla extract
  • a pinch of salt

Instructions

  1. Toast the pecans (optional): Preheat oven to 350°F (175°C). Spread pecans on a baking sheet and toast for about 5 minutes, stirring halfway. Let cool before using.
  2. Mix dry ingredients: In a jar or bowl, combine rolled oats, protein powder, pumpkin pie spice, ground cinnamon, and salt. Whisk or stir well to evenly distribute.
  3. Add wet ingredients: Stir in pumpkin puree, milk, Greek yogurt, maple syrup, and vanilla extract. Mix until smooth with no dry spots.
  4. Check consistency: Mixture should be creamy but not overly runny. Add a splash more milk if too thick.
  5. Refrigerate overnight: Seal container and refrigerate for at least 6 hours or overnight to let oats soak and flavors meld.
  6. Serve: Stir oats gently in the morning. Top with toasted pecans and drizzle extra maple syrup if desired.

Notes

Toast pecans for extra crunch and flavor. Use small-curd Greek yogurt for best creaminess. Sift protein powder with dry ingredients to avoid clumps. Adjust pumpkin pie spice to taste. Store leftovers in fridge up to 3 days; add milk before eating if thickened. Avoid freezing to maintain texture.
