  • 6 bone-in, skin-on chicken thighs (about 3 pounds)
  • 45 cloves garlic, minced
  • 1 cup freshly grated Parmesan cheese (about 90g)
  • 1 cup heavy cream (240ml)
  • 1 cup low sodium chicken broth (240ml)
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon Italian seasoning (oregano, basil, thyme blend)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat the chicken thighs dry with paper towels and season generously with salt and pepper on both sides.
  2. In a medium bowl, combine minced garlic, grated Parmesan, heavy cream, chicken broth, softened butter, Italian seasoning, and a pinch of salt and pepper. Stir until smooth and creamy.
  3. Place the chicken thighs skin-side down in the slow cooker. Pour the creamy garlic Parmesan sauce evenly over the chicken, coating each piece.
  4. Cover and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the chicken is tender and reaches an internal temperature of 165°F (74°C).
  5. Optional: For crispy skin, transfer the cooked chicken to a baking sheet and broil for 3-5 minutes, watching closely to avoid burning.
  6. Sprinkle with fresh chopped parsley before serving. If the sauce is too thin, stir in a slurry of 1 teaspoon cornstarch mixed with 1 tablespoon cold water and cook on high for 15 minutes to thicken.

Notes

Optional browning of chicken thighs before slow cooking adds extra flavor and crispy texture. Use bone-in, skin-on thighs for best results. If sauce separates or is too thin, use a cornstarch slurry to thicken. Can be adapted for stovetop cooking in a Dutch oven on low heat with occasional stirring.
