  • 2 cans white beans, drained and rinsed
  • 8 ounces cream cheese, softened

  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 2 teaspoons cumin
  • 1 teaspoon dried oregano
  • 1 jalapeño, seeded and diced (optional)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
  2. Add minced garlic and diced jalapeño (if using) and cook for another 2 minutes until fragrant.
  3. Place chicken breasts in the slow cooker. Add drained white beans, canned green chilies with juice, sautéed onion mixture, cumin, oregano, salt, and pepper.
  4. Pour in chicken broth.
  5. Cook on low for 6-7 hours or on high for 3-4 hours until chicken is tender.
  6. Shred the chicken directly in the slow cooker using two forks.
  7. Stir in softened cream cheese until fully melted and incorporated. Adjust seasoning with salt and pepper as needed.
  8. For extra thickness, cook uncovered on high for 10-15 minutes.
  9. Garnish with chopped fresh cilantro before serving.

Use softened cream cheese to avoid clumps. Sauté onions and garlic before adding to slow cooker for deeper flavor. Shred chicken directly in slow cooker to save dishes and absorb flavors.
