  • 8 ounces Mexican-style chorizo
  • 2 to 3 roasted, peeled, and chopped Hatch chiles (fresh or jarred)
  • 16 ounces white American cheese, shredded or cubed
  • 8 ounces Monterey Jack cheese, shredded
  • 1 cup whole milk (240 ml)
  • 4 ounces cream cheese, softened
  • ½ cup finely chopped onion (about half a small onion)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and black pepper to taste
  • A handful of fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Heat a skillet over medium heat. Add the chorizo and cook, breaking it up with a spatula, until browned and cooked through, about 6 to 8 minutes. Drain excess fat if needed, reserving some for flavor.
  2. In the same skillet, add the chopped onion and minced garlic to the chorizo fat. Sauté until softened and fragrant, about 3 to 4 minutes.
  3. Add the roasted, peeled, and chopped Hatch chiles to the skillet and stir for another minute to combine flavors.
  4. Transfer the chorizo mixture to the slow cooker. Add the white American cheese, Monterey Jack cheese, and softened cream cheese.
  5. Pour in the whole milk and sprinkle the ground cumin over the top. Season with salt and black pepper to taste.
  6. Set the slow cooker to LOW and cover. Cook for 2 to 3 hours, stirring every 30 minutes to ensure even melting and prevent sticking.
  7. If the dip is too thick, stir in a splash of milk to adjust consistency. Taste and adjust seasoning as needed.
  8. Just before serving, stir in chopped fresh cilantro for a bright, herbal note. Serve warm with tortilla chips, sliced veggies, or warm pita bread.

Notes

Use freshly shredded cheese for best melting results. Cook on low heat to avoid grainy texture. Stir every 20-30 minutes to prevent cheese from sticking. You can prepare chorizo and chile mixture a day ahead and refrigerate. For dairy-free, substitute cream cheese and milk with coconut-based alternatives and chorizo with plant-based sausage. If no slow cooker, melt ingredients gently on stovetop over low heat, stirring frequently.
