  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil, drained)
  • 3 cups fresh baby spinach
  • 1 cup heavy cream (240 ml)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth (120 ml)
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, and dried Italian herbs.
  2. Heat olive oil in a large sauté pan over medium-high heat. When oil shimmers, add chicken breasts and cook 4-5 minutes per side until golden brown but not fully cooked through. Transfer chicken to a plate and set aside.
  3. Lower heat to medium. In the same pan, add minced garlic and chopped sun-dried tomatoes. Stir for 1-2 minutes until fragrant.
  4. Pour in chicken broth and scrape the bottom of the pan to lift browned bits. Let simmer for 2 minutes to reduce slightly.
  5. Stir in heavy cream and grated Parmesan cheese. Mix gently until cheese melts and sauce thickens, about 3-5 minutes.
  6. Return chicken breasts to the pan, nestle into the sauce. Cover with lid, reduce heat to low, and simmer gently for 8-10 minutes until chicken is cooked through (internal temperature 165°F / 74°C). Occasionally spoon sauce over chicken.
  7. Remove lid and stir in fresh baby spinach. Cook 1-2 minutes until wilted. Adjust seasoning with salt and pepper if needed.
  8. Serve chicken with creamy sauce and spinach. Pairs well with crusty bread, pasta, or vegetables.

Notes

If sauce is too thick, add more chicken broth or cream to loosen. If too thin, simmer uncovered to reduce. Use a meat thermometer to ensure chicken reaches 165°F. Fresh garlic and good-quality sun-dried tomatoes improve flavor. Can substitute kale or arugula for spinach. For dairy-free, use coconut cream and dairy-free cheese alternatives.
