  • 1/3 cup (80 ml) heavy cream (can substitute coconut cream for dairy-free)
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup (120 ml) vegetable broth
  • 1 small yellow onion, finely chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/2 teaspoon dried Italian herbs or oregano
  • Crusty bread (baguette or sourdough), sliced for serving
  • Optional: pinch of red pepper flakes, grated Parmesan cheese, cooked Italian sausage or shredded rotisserie chicken

Instructions

  1. Prep your ingredients: mince garlic, finely chop onion, roughly chop sun-dried tomatoes, and rinse and drain canned beans.
  2. Heat olive oil over medium heat in a large skillet. Add chopped onion and cook until translucent and tender, about 5 minutes.
  3. Add garlic and stir for 30 seconds, being careful not to burn it.
  4. Stir in sun-dried tomatoes and dried Italian herbs or oregano; warm through for 1-2 minutes.
  5. Add drained beans and vegetable broth; stir gently and simmer on low heat for about 5 minutes.
  6. Pour in heavy cream and stir to combine. Season with salt and pepper to taste. Keep heat low to prevent cream from curdling.
  7. Add fresh spinach on top and stir until wilted, about 2-3 minutes.
  8. Optional: Toast sliced crusty bread in a separate pan or oven until golden and crisp.
  9. Give everything a final stir, adjust seasoning if needed, and serve immediately with crusty bread on the side.

Keep heat low when adding cream to prevent curdling. Rinse canned beans to remove excess salt and starch for a silky texture. Wilt spinach last to maintain bright color and tender texture.
