  • 8 oz Brie cheese, rind removed and chopped
  • 4 oz cream cheese, softened
  • 2 tbsp whole milk or heavy cream
  • 1 tsp fresh lemon juice
  • 1/4 tsp sea salt
  • Fresh cracked black pepper, to taste
  • 1/4 cup honey
  • 12 tsp chili flakes or a small fresh chili, minced
  • 1 cup walnuts, roughly chopped
  • 2 tbsp granulated sugar
  • 1 tbsp unsalted butter
  • Pinch of salt
  • Crackers and sliced baguette
  • Fresh fruit like sliced apples, pears, or grapes
  • Optional: a handful of olives or pickles

Instructions

  1. Prepare the Candied Walnuts: Heat a small saucepan over medium heat. Add butter and let it melt, then stir in sugar and a pinch of salt. Toss in walnuts and stir continuously to coat evenly. Cook until sugar melts and caramelizes to a golden amber, about 4-5 minutes. Transfer to parchment paper and let cool completely.
  2. Make the Hot Honey: In the same saucepan, gently warm honey over low heat. Add chili flakes or minced fresh chili and stir. Infuse on very low heat for about 5 minutes, stirring occasionally. Remove from heat and set aside.
  3. Whip the Brie: In a medium mixing bowl, combine chopped brie, softened cream cheese, milk or cream, lemon juice, salt, and black pepper. Using an electric mixer, whip on medium-high speed until smooth and fluffy, about 3-5 minutes. Scrape down sides occasionally.
  4. Assemble the Board: Spread whipped brie in a mound or ring on serving board. Drizzle warm hot honey over cheese. Scatter candied walnuts around and on top. Arrange crackers, baguette slices, and fresh fruit around the cheese.
  5. Final Touches: Optionally add fresh herbs like thyme or rosemary. Serve immediately or cover loosely and refrigerate up to 2 hours. Bring to room temperature before serving.

Notes

Start with brie at room temperature and remove rind for smooth texture. Adjust chili flakes to control heat level. Stir candied walnuts constantly to avoid burning. Let board sit at room temperature 20 minutes before serving for best flavor.
