  • 2 to 3 tablespoons (30 to 45 ml) heavy cream
  • 1 to 2 teaspoons (5 to 10 ml) honey
  • 1/4 to 1/2 teaspoon chili flakes
  • 1 teaspoon (5 ml) fresh lemon juice (optional)
  • Extra virgin olive oil, for drizzling
  • Freshly ground black pepper, to taste

Instructions

  1. Crumble about 8 ounces (225 grams) of feta into chunks and place into a food processor bowl.
  2. Add 2 tablespoons (30 ml) of heavy cream and 1 teaspoon (5 ml) of fresh lemon juice.
  3. Pulse the mixture in short bursts, scraping down the sides with a spatula as needed, until fluffy and whipped (about 1 to 2 minutes). Avoid overblending.
  4. Add 1 to 2 teaspoons (5 to 10 ml) of honey and 1/4 teaspoon chili flakes. Pulse a few more times to incorporate evenly. Taste and adjust sweetness or heat if needed.
  5. Transfer the dip to a serving bowl. Drizzle with extra virgin olive oil and sprinkle additional chili flakes and freshly ground black pepper on top.
  6. Optional: Garnish with fresh herbs like chopped thyme or oregano. Serve with warm pita, crunchy crackers, or raw veggies.

Notes

Use a high-quality block feta for best creaminess. Keep feta and cream cold before blending. Pulse in short bursts to avoid overblending and watery texture. Adjust honey and chili flakes to taste. If dip is too thick, stir in more cream or olive oil. The dip can be made ahead and tastes better after chilling. Store leftovers refrigerated up to 3 days or freeze in portions.
