A quick and easy whipped feta dip combining creamy feta, sweet honey, and crunchy toasted pistachios for a versatile and crowd-pleasing appetizer.

  • 8 oz (225 g) creamy, brined feta cheese (preferably sheep’s milk or mixed milk feta)
  • 2 tablespoons (30 ml) full-fat Greek yogurt
  • 2 tablespoons (30 ml) mild-flavored honey (clover or wildflower recommended)
  • 1/4 cup (30 g) shelled pistachios, toasted lightly
  • 1 tablespoon (15 ml) extra virgin olive oil
  • 1 teaspoon (5 ml) fresh lemon juice
  • Black pepper, freshly ground, to taste
  • Optional: fresh herbs like thyme or oregano for garnish

Instructions

  1. Toast the pistachios: Warm a dry skillet over medium heat. Add the shelled pistachios and toast for 3–4 minutes, stirring frequently until fragrant and lightly golden. Remove from heat and let cool.
  2. Prepare the feta: Crumble the feta into chunks and place it in the bowl of a food processor. Add the Greek yogurt, honey, olive oil, and lemon juice.
  3. Whip the mixture: Pulse the food processor in short bursts, scraping down the sides occasionally. Continue until the dip is smooth and fluffy, about 2–3 minutes. The texture should be creamy, almost mousse-like, without large feta pieces.
  4. Season: Taste the dip and add freshly ground black pepper. Add a pinch of salt if needed, but be cautious.
  5. Fold in the pistachios: Transfer the whipped feta dip to a serving bowl. Gently fold in most of the toasted pistachios, reserving a few for garnish.
  6. Garnish and serve: Drizzle a little extra honey on top, sprinkle the remaining pistachios, and scatter fresh herbs if desired. Serve with warm pita bread, crackers, or fresh veggies.

Notes

Use a creamy, brined feta for best whipping results. Toast pistachios carefully to avoid burning. Pulse the food processor rather than blending continuously to maintain texture. The dip can be made ahead and refrigerated; bring to room temperature before serving. For a dairy-free version, substitute feta and Greek yogurt with plant-based alternatives.
