These crispy pizza quesadillas combine golden, crunchy tortillas with gooey melted mozzarella and tangy marinara sauce, making a quick and delicious snack perfect for after school or any time.

Ingredients

  • Flour tortillas (8-inch size)
  • Shredded mozzarella cheese (whole milk preferred, about 1 cup or 100g per quesadilla)
  • Marinara sauce (about ½ cup or 120ml)
  • Pepperoni slices (optional, about 10 slices)
  • Olive oil or butter (about 1 tablespoon)
  • Italian seasoning (a sprinkle, optional)
  • Grated Parmesan cheese (optional, for serving or sprinkling inside)
  • Fresh basil or oregano leaves (optional)

Instructions

  1. Shred the mozzarella cheese finely (about 1 cup or 100g per quesadilla). Warm the marinara sauce in a small saucepan or microwave until just heated through, about 1-2 minutes. Lay out your tortillas.
  2. On one half of a tortilla, spread about 2 tablespoons (30ml) of marinara sauce, leaving a small border around the edge. Sprinkle ½ cup (50g) of shredded mozzarella evenly on top. Add 5-6 pepperoni slices if using. Sprinkle a pinch of Italian seasoning and a little grated Parmesan (optional). Fold the other half of the tortilla over to create a half-moon shape.
  3. Place 1 tablespoon of olive oil or butter over medium heat in your skillet. Let it warm for about 1 minute until hot but not smoking.
  4. Place the folded quesadilla in the pan. Cook for 3-4 minutes on the first side until golden brown and crisp. Carefully flip with a spatula and cook another 3-4 minutes on the other side. Press down gently with the spatula to encourage even crisping and melting.
  5. Check that the quesadilla is golden and crispy on both sides, with the cheese melted through. If the cheese isn’t melted but the tortilla is browning too fast, lower the heat slightly and cover the pan for a minute to trap heat.
  6. Remove from pan, let cool for a minute, then cut into wedges. Serve warm with a small bowl of marinara sauce for dipping.

Notes

Use medium heat to avoid burning the tortillas while ensuring cheese melts properly. Use enough olive oil or butter to create a golden crisp. Avoid overfilling to prevent sogginess. Keep cooked quesadillas warm in a low oven (200°F/90°C) if making multiple. For vegan or gluten-free options, substitute dairy-free cheese and gluten-free tortillas.
