These crispy air fryer buffalo chicken wings deliver the perfect crunch and classic buffalo flavor without the mess of deep frying. Ready in under 30 minutes, they are ideal for quick dinners or game day gatherings.

Ingredients

Scale
  • 2 pounds chicken wings, tips removed or separated into flats and drumettes
  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon salt, or to taste
  • ½ teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 4 tablespoons unsalted butter, melted
  • ½ cup hot sauce (such as Frank’s RedHot)
  • 1 teaspoon honey or brown sugar (optional)
  • ½ teaspoon smoked paprika (optional)
  • Celery sticks, for serving
  • Blue cheese dip, for serving

Instructions

  1. Pat the chicken wings dry with paper towels to remove moisture.
  2. In a large bowl, mix baking powder, salt, black pepper, and garlic powder. Toss the wings until evenly coated.
  3. Arrange the wings in a single layer in the air fryer basket without overlapping. Cook in batches if necessary.
  4. Air fry at 400°F (200°C) for 25-30 minutes, flipping halfway through, until wings are golden brown and crispy. Add 3-5 minutes if needed, watching carefully to avoid burning.
  5. While wings cook, melt butter in a small saucepan or microwave. Stir in hot sauce, honey, and smoked paprika until smooth. Adjust seasoning to taste.
  6. Transfer cooked wings to a large bowl, pour buffalo sauce over, and toss gently to coat evenly.
  7. Serve immediately with celery sticks and blue cheese dip.

Notes

Dry the wings thoroughly before coating to ensure crispiness. Use baking powder (not baking soda) for the best crunch. Do not overcrowd the air fryer basket to allow even cooking. Flip wings halfway through cooking. For reheating, keep sauce separate and re-crisp wings in air fryer at 350°F for 5-7 minutes before tossing in sauce.
