This recipe delivers crispy chicken wings with a spicy-sweet Calabrian honey glaze, cooked quickly and easily in an air fryer for a perfect crunch without the grease.

Ingredients

Scale
  • 2 pounds chicken wings, fresh or thawed, tips removed or whole
  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons Calabrian chili paste or finely chopped Calabrian chiles
  • 3 tablespoons honey (preferably raw or mild-flavored)
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons unsalted butter
  • Optional: lemon juice, a squeeze to finish

Instructions

  1. Pat the chicken wings dry with paper towels to remove moisture.
  2. In a large bowl, toss wings with baking powder, salt, black pepper, garlic powder, and smoked paprika until evenly coated.
  3. Preheat the air fryer to 400°F (200°C) for 5 minutes.
  4. Arrange wings in a single layer in the air fryer basket without overcrowding.
  5. Cook wings for 10 minutes, then flip and cook for another 10-15 minutes until golden and crispy. Add 2-3 extra minutes if needed for extra crispiness, watching closely to avoid burning.
  6. While wings cook, melt butter in a small saucepan over low heat.
  7. Stir in Calabrian chili paste, honey, and apple cider vinegar; warm gently until combined and slightly thickened, about 3 minutes. Add lemon juice if desired.
  8. Transfer cooked wings to a large bowl and toss with the warm glaze until evenly coated.
  9. Serve immediately with optional sides like celery sticks or crunchy slaw.

Notes

Pat wings very dry before seasoning to ensure crispiness. Do not overcrowd the air fryer basket. Flip wings halfway through cooking for even crisping. Glaze wings while warm for best adhesion. For extra crispiness, add 2-3 minutes of cooking time but watch carefully. If wings are unevenly colored, broil 1-2 minutes to finish. Leftovers can be reheated in the air fryer at 350°F for 5-7 minutes to regain crispiness. Avoid microwaving to prevent soggy skin.
