  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil (or any neutral oil)
  • 1 cup all-purpose flour (120 g)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar (100 g) for cinnamon sugar coating
  • 1 tablespoon ground cinnamon
  • 1/2 cup heavy cream (120 ml)
  • 1 cup semi-sweet chocolate chips (170 g)
  • 1 teaspoon unsalted butter (optional)

Instructions

  1. In a medium saucepan, combine 1 cup water, 2 tablespoons sugar, 1/2 teaspoon salt, and 2 tablespoons vegetable oil. Bring to a boil over medium heat, stirring occasionally. Remove from heat immediately once boiling.
  2. Quickly stir in 1 cup all-purpose flour until the mixture forms a ball and pulls away from the sides of the pan, about 1-2 minutes. Let the dough cool for 5 minutes until warm but not hot.
  3. Transfer the dough to a mixing bowl. Beat in 2 large eggs, one at a time, mixing well after each addition until smooth and shiny. Stir in 1 teaspoon vanilla extract.
  4. Fit a piping bag with a large star tip and fill it with the dough. Pipe 4-inch strips onto parchment paper or a silicone mat that fits your air fryer basket. Cut strips to desired length.
  5. Preheat the air fryer to 375°F (190°C). Place churros in a single layer in the basket without touching. Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy. Cook in batches if necessary.
  6. While churros cook, mix 1/2 cup sugar and 1 tablespoon cinnamon in a small bowl.
  7. Immediately toss cooked churros in the cinnamon sugar mixture to coat while warm.
  8. To make chocolate sauce, heat 1/2 cup heavy cream in a small saucepan over medium heat until it starts to simmer. Remove from heat and stir in 1 cup chocolate chips until smooth. Stir in 1 teaspoon butter for shine and richness.
  9. Serve churros warm with chocolate sauce for dipping.

Notes

Let the dough cool before adding eggs to avoid scrambling. Flip churros halfway through air frying for even browning. Work in batches to avoid overcrowding the air fryer basket. If dough is too stiff for piping, add water a teaspoon at a time. Use parchment or silicone mat sparingly to prevent sticking but maintain air circulation. Chocolate sauce can be reheated gently and loosened with a splash of cream if thickened.
