  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning (optional)
  • ½ teaspoon smoked paprika
  • 1 tablespoon fresh parsley, finely chopped (for garnish)

Instructions

  1. Trim any excess fat from the steak and pat dry with paper towels. Cut into 1-inch cubes for even cooking (about 5 minutes).
  2. In a mixing bowl, combine minced garlic, grated parmesan, olive oil, salt, black pepper, paprika, and Italian seasoning if using. Stir until well combined and fragrant (about 1 minute).
  3. Add steak cubes to the bowl and toss gently but thoroughly to coat each piece evenly with the garlic parmesan mixture (about 2 minutes).
  4. Preheat the air fryer to 400°F (200°C) for 3 minutes.
  5. Place the steak pieces in a single layer in the air fryer basket, avoiding overcrowding. Cook in batches if necessary.
  6. Air fry at 400°F (200°C) for 6 minutes, then flip or shake the basket to turn the bites. Cook an additional 6 minutes until golden and crispy outside but tender inside.
  7. Check doneness; steak bites should reach an internal temperature of 135°F (57°C) for medium-rare to medium. Add 1-2 minutes if more well-done is preferred, watching carefully to avoid drying out.
  8. Let the steak bites rest for 2-3 minutes after cooking to allow juices to redistribute.
  9. Sprinkle chopped fresh parsley on top before serving.

Notes

Do not overcrowd the air fryer basket to ensure even cooking and crispiness. Toss steak bites halfway through cooking to prevent parmesan from burning. Use fresh parmesan cheese for best crust.
