Instructions

  1. Wash and dry 3 medium zucchinis. Cut off the ends, then slice lengthwise into 1/4-inch thick sticks, about 3-4 inches long.
  2. In a shallow bowl, combine 3/4 cup panko breadcrumbs, 1/2 cup grated Parmesan, 1 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Mix well.
  3. In another bowl, beat 2 large eggs until smooth.
  4. Dip each zucchini fry first into the beaten eggs, letting excess drip off, then dredge it in the breadcrumb mixture, pressing gently to adhere the coating evenly.
  5. Preheat the air fryer to 400°F and let it warm for about 3 minutes.
  6. Place the coated zucchini fries in a single layer in the air fryer basket without overcrowding. Spray lightly with olive oil spray.
