Crispy Bacon-Wrapped Jalapeño Poppers Recipe with Easy Creamy Ranch Dip

A quick and easy snack featuring jalapeños stuffed with a creamy cheese filling, wrapped in crispy bacon, and served with a homemade creamy ranch dip. Perfect for entertaining or a cozy night in.

  • 12 medium fresh jalapeños, washed and halved lengthwise, seeds removed or left in for more heat
  • 8 oz (225 g) cream cheese, softened
  • 1 cup (100 g) shredded cheddar cheese
  • 12 slices thin-cut bacon
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley or chives, finely chopped (optional)
  • For the Creamy Ranch Dip:
  • 1/2 cup (120 ml) mayonnaise
  • 1/2 cup (120 ml) sour cream or Greek yogurt
  • 1 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice or white vinegar

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and place a wire rack on top if available.
  2. Wearing gloves, slice each jalapeño in half lengthwise and remove seeds and membranes for less heat, or leave some seeds for more kick. Pat dry with a paper towel.
  3. In a medium bowl, mix softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, pepper, and fresh parsley or chives if using until smooth and well combined. Adjust seasoning to taste.
  4. Fill each jalapeño half generously with the cheese mixture, slightly mounded but not overflowing.
  5. Wrap each filled jalapeño half with one slice of bacon, overlapping slightly to secure. Trim bacon if too long. Place seam side down on the wire rack or baking sheet.
  6. Bake for 20-25 minutes, turning once halfway through for even crispness. Bacon should be golden and crispy but not burnt.
  7. While baking, whisk together mayonnaise, sour cream or Greek yogurt, dried dill, garlic powder, onion powder, lemon juice, salt, and pepper in a small bowl. Chill until serving.
  8. Remove poppers from oven and let cool for a few minutes before serving with the creamy ranch dip.
  9. Optional: If bacon is not crispy enough, broil for 1-2 minutes watching closely to avoid burning.

Notes

Use fresh jalapeños for best texture and flavor. Wrap bacon tightly to keep filling sealed and bacon crispy. Thin-cut bacon crisps faster and more evenly. Use a wire rack to allow bacon fat to drip away and prevent sogginess. Let poppers rest 5 minutes after baking to firm up filling. For extra crispy bacon, broil 1-2 minutes watching carefully. Store leftovers in airtight container in fridge up to 3 days; reheat in oven at 350°F for 10 minutes. Avoid microwaving to keep bacon crispy.
