A quick and easy appetizer featuring smoky bacon wrapped around jalapeños filled with a creamy blend of cream cheese and shredded cheddar. Perfect for parties and casual gatherings, these poppers deliver a satisfying crunch with a spicy, creamy kick.

  • 12 medium fresh jalapeños
  • 8 oz (227 g) cream cheese, softened
  • 1 cup (about 113 g) shredded cheddar cheese, sharp or mild
  • 12 slices thin-cut bacon
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: 1 tablespoon maple syrup or honey for brushing bacon

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top if using.
  2. Wear gloves and slice each jalapeño in half lengthwise. Remove all seeds and membranes with a small spoon.
  3. In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, and pepper. Stir until smooth.
  4. Fill each jalapeño half generously with the cheese mixture using a spoon or small scoop.
  5. Wrap each stuffed jalapeño half tightly with one slice of bacon, securing the ends underneath if needed. Cut bacon slices in half if necessary.
  6. Optionally, brush each bacon wrap with maple syrup or honey for a subtle sweetness.
  7. Place the wrapped poppers on the wire rack or directly on the foil-lined baking sheet.
  8. Bake for 20-25 minutes, checking after 15 minutes. If not using a wire rack, flip the poppers halfway through baking for even crisping.
  9. Let the poppers cool for 5 minutes before serving.

Wear gloves when handling jalapeños to avoid skin irritation. Use thin-cut bacon for faster crisping. If you don’t have a wire rack, flip poppers halfway through baking. For extra crispiness, broil for 1-2 minutes at the end but watch carefully to avoid burning. Remove jalapeño seeds to reduce heat. Poppers can be made ahead by prepping and stuffing jalapeños, then wrapping and baking before serving. Store leftovers in an airtight container in the fridge for up to 3 days and reheat in the oven to maintain crispiness.
