  • 2 sheets puff pastry, thawed
  • 8 ounces (about 225 grams) whole wheel brie cheese, rind on
  • 1 cup (about 100 grams) fresh cranberries (or frozen)
  • 2 teaspoons fresh rosemary, finely chopped
  • 2 tablespoons granulated sugar
  • 1 teaspoon orange zest (optional)
  • 1 egg yolk, beaten
  • 1 tablespoon unsalted butter
  • Pinch of salt

Instructions

  1. Prepare the cranberry filling: In a small saucepan, melt 1 tablespoon unsalted butter over medium heat. Add 1 cup fresh cranberries, 2 teaspoons finely chopped rosemary, 2 tablespoons granulated sugar, 1 teaspoon orange zest (optional), and a pinch of salt. Cook, stirring occasionally, until cranberries start to pop and soften, about 5-7 minutes. Remove from heat and let cool slightly.
  2. Preheat the oven to 400°F (200°C). Position the rack in the middle for even baking.
  3. On a lightly floured surface or parchment paper, unfold one sheet of thawed puff pastry. Using a sharp knife or pizza cutter, cut into a circle about 10 inches (25 cm) in diameter. Place the second sheet on top and cut the same size circle. Place one circle onto the lined baking sheet.
  4. Place the whole wheel of brie in the center of the puff pastry circle on the baking sheet. Spoon the cooled cranberry-rosemary mixture evenly over the top of the brie. Cover with the second puff pastry circle.
  5. Gently press the edges of the two pastry circles together to seal. Using the tip of a knife, score the pastry edges about 1 inch (2.5 cm) from the edge to create a border—be careful not to cut all the way through. Then, starting from the edge of the brie, cut 1-inch wide strips around the circle, twisting each strip slightly to create a wreath effect.
  6. Brush the entire surface and edges of the wreath with the beaten egg yolk.
  7. Bake for 25-30 minutes, or until the puff pastry is puffed and golden brown. Keep a close eye after 20 minutes to avoid over-browning.
  8. Remove from the oven and let the wreath cool on a wire rack for 5-10 minutes before serving.
