  • 2 tablespoons finely chopped green onions
  • 1 teaspoon garlic powder
  • About 12 egg roll wrappers
  • Vegetable oil for frying (or canola oil)
  • Optional dipping sauce: blue cheese dressing or extra ranch dressing

Instructions

  1. In a large mixing bowl, combine shredded chicken, softened cream cheese, buffalo sauce, ranch dressing, shredded cheese, chopped green onions, and garlic powder. Mix until well combined and creamy, about 5 minutes.
  2. Lay one egg roll wrapper on a flat surface in a diamond shape with one corner pointing towards you. Keep remaining wrappers covered with a damp cloth.
  3. Spoon about 2 tablespoons of filling onto the lower third of the wrapper, spreading evenly but leaving edges clear.
  4. Fold the bottom corner over the filling, then fold in the left and right corners tightly towards the center. Roll up firmly but gently towards the top corner, sealing the edge with a dab of water. Repeat with remaining wrappers and filling.
  5. Pour about 1 inch of vegetable oil into a deep skillet or frying pan and heat over medium-high heat to 350°F (175°C).
  6. Carefully place 3-4 egg rolls into the hot oil without overcrowding. Fry for 2-3 minutes per side, turning until golden and crisp all over. Remove and drain on paper towels.
  7. Serve immediately with blue cheese or ranch dressing for dipping.

Notes

Maintain oil temperature around 350°F (175°C) to avoid greasy or burnt egg rolls. Seal edges with water to prevent bursting. Wrappers should be kept covered with a damp towel to prevent drying out. Baking option: brush with oil and bake at 400°F (200°C) for 15-18 minutes, flipping halfway.
