Crispy Cheesy Beef Taco Casserole with Doritos Crust

A quick and easy casserole combining ground beef, cheese, and a crunchy Doritos crust for a comforting and crowd-pleasing meal with a fun twist.

  • 1 pound (450g) ground beef (80/20 preferred)
  • 7 ounces (200g) Nacho Cheese Doritos, crushed
  • 2 cups (200g) shredded sharp cheddar cheese
  • 1 cup (100g) shredded Monterey Jack cheese
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed (optional)
  • 1 cup (150g) frozen corn
  • 1 cup (240ml) tomato sauce
  • 2 tablespoons taco seasoning (homemade or store-bought)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional toppings: sour cream, sliced jalapeños, chopped cilantro, diced tomatoes

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch (23×33 cm) baking dish to prevent sticking.
  2. Crush the Doritos in a large zip-top bag until mostly fine crumbs with some small chunks remain. Set aside about 1 cup (100g) for the topping.
  3. Heat olive oil in a skillet over medium heat. Add chopped onion and minced garlic; sauté until softened and fragrant, about 3-4 minutes.
  4. Add ground beef and cook, stirring occasionally, until browned and cooked through, about 7-8 minutes. Drain excess fat if needed.
  5. Sprinkle in taco seasoning, salt, and pepper to taste. Stir in drained black beans, frozen corn, and tomato sauce. Let simmer on low for 5 minutes to blend flavors and thicken slightly. Remove from heat.
  6. Spread half of the crushed Doritos in the bottom of the prepared baking dish. Layer half of the beef mixture evenly over the chips.
  7. Sprinkle 1 cup cheddar and ½ cup Monterey Jack cheese over the beef layer. Repeat layering with remaining beef mixture and top with remaining cheeses and crushed Doritos reserved for the crust.
  8. Cover loosely with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is bubbly and Doritos crust is golden and crispy.
  9. Let the casserole rest for 5-10 minutes before serving. Garnish with sour cream, jalapeños, or cilantro if desired.

Notes

Crush Doritos to a mix of fine crumbs and small chunks for the best crust texture. Cover casserole while baking to keep moisture, then uncover for last 10 minutes to crisp the topping. Let rest before serving to set layers. For gluten-free, use gluten-free taco seasoning and corn chips. For dairy-free, substitute cheese with plant-based alternatives or omit cheese and add avocado or guacamole after baking.
