  • 1 large loaf of soft bread (pull-apart bread or a round boule; King’s Hawaiian Sweet Bread preferred)
  • 8 oz shredded mozzarella cheese
  • 4 oz shredded sharp cheddar cheese (optional)
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 4 large garlic cloves, minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Optional: 1/4 teaspoon red pepper flakes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the melted butter, minced garlic, chopped parsley, salt, pepper, and red pepper flakes if using. Let it sit for about 5 minutes.
  3. Using a sharp knife, carefully cut the bread into a grid pattern about 1 to 1.5 inches apart both horizontally and vertically, without slicing all the way through.
  4. Gently pull apart the bread sections and insert shredded mozzarella and cheddar into the cracks.
  5. Use a pastry brush to coat the entire loaf with the garlic butter, making sure to get it deep into the cuts.
  6. Place the bread in a cast iron skillet. Optionally, add a little butter to the skillet bottom before placing the bread.
  7. Bake for 20-25 minutes until the edges are golden and crispy and the cheese is melted and gooey.
  8. Optional: Broil for 1-2 minutes for extra crispiness on top, watching closely to avoid burning.
  9. Let the bread cool for a few minutes before serving to avoid burns but keep it warm enough to pull apart easily.

Notes

Use room temperature butter to prevent sogginess. Don’t overstuff cheese to avoid greasiness. Score bread carefully without cutting through the base. Watch baking times closely as ovens vary. For extra crispiness, broil briefly but watch to avoid burning. Leftovers can be refrigerated up to 2 days and reheated in the oven to restore crispiness.
