  • ½ cup (about 1.4 oz) dried mango pieces, chopped into bite-sized bits
  • ½ cup (about 1 oz) toasted coconut flakes, unsweetened
  • ½ teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Drain and rinse chickpeas. Use a sieve or colander, then spread them on a clean kitchen towel or paper towels. Press gently to remove as much moisture as possible.
  3. In a mixing bowl, toss chickpeas with olive oil, maple syrup, sea salt, cinnamon, and vanilla extract until each chickpea is coated well but not dripping.
  4. Spread chickpeas in a single layer on a rimmed, parchment-lined baking sheet, ensuring they have space to avoid steaming.
  5. Roast for 25-30 minutes, stirring every 10 minutes to ensure even cooking and prevent burning. Watch closely during the last 5 minutes until golden and crispy but not blackened.
  6. While chickpeas roast, toast coconut flakes in a dry skillet over medium heat, stirring frequently for 3-5 minutes until golden and fragrant. Remove immediately to prevent burning.
  7. Remove chickpeas from oven and let cool on the baking sheet to crisp up further.
  8. In a large bowl, combine cooled chickpeas, toasted coconut, and chopped dried mango. Toss gently to mix without crushing the mango pieces.
  9. Store in an airtight container at room temperature for up to one week.
