This recipe features crispy grilled chicken drumsticks coated with a sticky honey BBQ glaze that caramelizes perfectly on the grill, delivering a smoky, sweet, and tender bite every time.

Ingredients

Scale
  • 8 medium chicken drumsticks, skin-on and bone-in
  • 2 tablespoons olive oil
  • 1/4 cup honey (raw or regular)
  • 1/2 cup BBQ sauce (smoky, slightly tangy, e.g., Stubb’s)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon chili powder (optional)
  • Salt and black pepper to taste
  • 1 tablespoon fresh lemon juice

Instructions

  1. Pat the drumsticks dry with paper towels to help the skin get crispy.
  2. In a large bowl, toss the drumsticks with olive oil, smoked paprika, garlic powder, onion powder, chili powder (if using), salt, and pepper until evenly coated.
  3. Preheat the grill to medium-high heat (around 400°F / 204°C). If using charcoal, wait until coals are covered with white ash.
  4. Place drumsticks on the grill skin side down. Turn every 5-7 minutes to avoid burning and ensure even charring. Watch for flare-ups and move drumsticks to cooler parts if needed.
  5. While grilling, whisk together honey, BBQ sauce, and fresh lemon juice in a small bowl to make the glaze.
  6. During the last 5 minutes of grilling, brush the glaze on all sides of the drumsticks in several layers, letting it bubble and stick without burning.
  7. Check for doneness using an instant-read thermometer (internal temperature should be 165°F / 74°C) or by cutting into the thickest part to ensure juices run clear.
  8. Remove drumsticks from heat and let rest for 5 minutes before serving to allow juices to redistribute.

Notes

Pat the drumsticks dry before seasoning to ensure crispy skin. Apply the honey BBQ glaze only in the last 5 minutes of grilling to prevent burning. Use medium-high heat and turn frequently for even cooking. Rest the meat before serving to keep it juicy. If glaze darkens too quickly, move drumsticks to indirect heat while glazing.
