Crispy Lemon Herb Zucchini Fritters with Garlic Greek Yogurt Dip

Quick and easy zucchini fritters with a bright lemon and fresh herb flavor, served with a creamy garlic Greek yogurt dip. Perfect as a snack, appetizer, or light meal.

  • 3 medium zucchinis, grated and squeezed dry
  • 1 teaspoon salt, plus more to taste
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped parsley
  • 1 tablespoon chopped dill
  • 2 cloves garlic, minced
  • ½ cup (60g) all-purpose flour
  • 2 large eggs, beaten
  • 3 tablespoons olive oil, for frying
  • 1 cup (240ml) plain full-fat Greek yogurt
  • Freshly ground black pepper, to taste
  • Optional: lemon zest for garnish

Instructions

  1. Grate the zucchinis using a box grater or food processor. Transfer the grated zucchini to a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible until damp but not dripping.
  2. Place the squeezed zucchini in a large mixing bowl. Add 1 teaspoon salt and toss gently. Let sit for 10 minutes to draw out moisture, then squeeze again if necessary.
  3. Add 2 tablespoons fresh lemon juice, 2 tablespoons chopped parsley, 1 tablespoon chopped dill, and 2 cloves minced garlic to the zucchini. Stir to combine.
  4. Mix in ½ cup all-purpose flour and 2 beaten eggs. Season with freshly ground black pepper to taste. The batter should be thick enough to hold its shape; add more flour if too wet.
  5. Heat 3 tablespoons olive oil over medium heat in a non-stick skillet or cast iron pan until shimmering but not smoking.
  6. Scoop batter using a ¼ cup measure or hands into the pan, flattening each mound to about ½ inch thickness. Cook for 3–4 minutes per side until golden brown and crispy. Fry in batches without overcrowding.
  7. Transfer cooked fritters to a paper towel-lined plate to drain excess oil. Keep warm in a low oven (around 200°F) while frying remaining fritters.
  8. Prepare the garlic Greek yogurt dip by combining 1 cup plain Greek yogurt with 1 minced garlic clove, a pinch of salt, and a squeeze of lemon juice. Stir well and refrigerate until serving.
  9. Serve fritters warm with a dollop of garlic Greek yogurt dip. Garnish with lemon zest or extra herbs if desired.

Notes

Drying the zucchini thoroughly is essential to avoid soggy fritters. Use medium heat to get a golden crust without burning. Flip fritters only once edges are set and golden. The garlic yogurt dip is best made ahead and served chilled but not icy cold. For gluten-free, substitute flour with almond or gluten-free flour. Vegan option available by replacing eggs with flax eggs and using dairy-free yogurt.
