A quick and easy no-cook recipe for crispy bread & butter zucchini pickles with a sweet and tangy flavor, perfect for summer and beyond.

  • 3 medium zucchini (about 1.5 pounds / 700 grams), thinly sliced into rounds or half-moons
  • 1 cup apple cider vinegar (240 ml)
  • 1 cup granulated sugar (200 grams)
  • 1 tablespoon kosher salt (15 grams)
  • 1 teaspoon yellow mustard seeds (2 grams)
  • 1/2 teaspoon ground turmeric (1 gram)
  • 1/2 teaspoon celery seeds (optional, 1 gram)
  • 1 small onion, thinly sliced (optional)
  • 1/2 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Wash and dry zucchini. Slice into 1/8-inch (3 mm) thick rounds or half-moons using a mandoline or sharp knife.
  2. Toss zucchini slices with 1 tablespoon kosher salt in a medium bowl. Let sit for 1 hour at room temperature to draw out moisture. Drain and pat dry with paper towels.
  3. In a clean bowl, whisk together 1 cup apple cider vinegar, 1 cup granulated sugar, 1 teaspoon yellow mustard seeds, 1/2 teaspoon ground turmeric, 1/2 teaspoon celery seeds (if using), and 1 tablespoon kosher salt until sugar and salt dissolve.
  4. Add drained zucchini slices (and optional onion and red pepper flakes) to a large jar or airtight container. Pour pickling brine over zucchini to cover completely. Press down gently if needed.
  5. Seal jar tightly and refrigerate for at least 24 hours before tasting. Flavors develop best after 48-72 hours.

Notes

Do not skip the salting step to keep pickles crisp. Slice zucchini uniformly for even pickling. Use apple cider vinegar for mild tang. If pickles feel limp after 24 hours, pat dry and refresh brine with vinegar and salt. Refrigerate and consume within 3 weeks for best quality.
