  • 8 ounces salami (Genoa or soppressata, sliced thin)
  • 6 ounces prosciutto (thinly sliced, torn into pieces)
  • 4 ounces pepperoni (sliced)
  • 8 ounces fresh mozzarella balls (small, drained)
  • 4 ounces sharp cheddar (cubed or sliced)
  • 1 cup mixed olives (green and kalamata)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup roasted red peppers (sliced into strips)
  • 1/2 cup marinated artichoke hearts (quartered)
  • Fresh rosemary sprigs (for garnish, optional)
  • Crackers or crostini (enough to fill gaps)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix the Parmesan with garlic powder and black pepper in a small bowl.
  3. Spoon the Parmesan mixture onto the parchment paper in small piles, about 1 tablespoon per crisp. Space them about 2 inches apart. For a football shape, aim for slightly oval piles, about 2 inches long and 1.5 inches wide.
  4. Bake for 6-8 minutes, watching closely after 5 minutes. The cheese should be golden brown and bubbly, with the edges turning a deeper brown.
  5. Remove from the oven and let cool for 1 minute on the baking sheet. They’ll be soft and pliable at this point.
  6. Shape the crisps into footballs while they’re still warm. Use a small football-shaped cookie cutter to press down and cut out the shape, or use a knife to trim the edges. Gently press the edges to create the classic football pointy ends. Work quickly—you have about 2-3 minutes before they harden.
  7. Transfer the shaped crisps to a wire rack to cool completely. They’ll crisp up as they cool, becoming sturdy and crunchy. This takes about 5 minutes.
  8. While the crisps cool, prepare your charcuterie board. Arrange the meats, cheeses, olives, tomatoes, and other ingredients on your board. Leave a clear space in the center for the football.
  9. Arrange the Parmesan crisps in a football shape in the center of the board. Start with a base layer of crisps, then add a second layer slightly offset, like shingles on a roof. Use about 12-15 crisps for a standard football shape.
  10. Garnish with fresh rosemary sprigs at the ends of the football to look like the laces or just scatter them around for color. Add any final touches—sprinkle some flaky sea salt over everything, maybe a drizzle of honey over the cheese.
  11. Serve immediately or within an hour. The crisps stay crunchy for about 2-3 hours, but they’re best fresh.

Notes

Use freshly grated Parmesan from a block for best results. Pre-shredded cheese contains anti-caking agents that prevent proper melting. Watch the oven closely as crisps can burn quickly. Work quickly when shaping the crisps as they harden within 2-3 minutes. Store leftover crisps in an airtight container at room temperature for up to 3 days.
