Ingredients

Scale
  • 1 pound (450 g) pizza dough, store-bought or homemade, room temperature
  • 2025 pepperoni slices, chopped or halved
  • 2 cups (200 g) shredded whole milk mozzarella cheese
  • 1/4 cup (25 g) grated Parmesan cheese
  • 4 tablespoons (1/4 cup or 60 g) unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning or dried oregano
  • Pinch of salt
  • 1 tablespoon (15 ml) olive oil, for coating the baking dish
  • Optional: red pepper flakes for heat
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the garlic butter glaze by combining melted butter, minced garlic, Italian seasoning, and a pinch of salt in a small bowl. Set aside.
  3. Roll the pizza dough out gently on a lightly floured surface to a roughly 12-inch square. Cut into 1-inch pieces.
  4. In a large bowl, toss the dough pieces with chopped pepperoni, shredded mozzarella, and grated Parmesan cheese until evenly coated.
  5. Grease a 9-inch bundt pan or deep oven-safe skillet with olive oil.
  6. Layer the dough mixture evenly into the prepared pan, pressing down gently to create air pockets but not flattening the dough.
  7. Bake for 25-30 minutes until the top is golden brown and edges are crispy. Tent with foil if browning too quickly.
  8. Remove from oven and immediately brush the warm bread generously with the garlic butter glaze.
  9. Let cool for 5 minutes to allow cheese to settle.
  10. Serve warm, pulling apart pieces. Garnish with fresh parsley or red pepper flakes if desired.

Notes

Use fresh garlic for best flavor in the glaze. Grease the pan well to prevent sticking. Let the bread cool slightly before pulling apart to avoid molten cheese burns. You can prepare dough pieces ahead and refrigerate for up to an hour before baking. Reheat leftovers in a 350°F oven for 10-12 minutes to restore crispiness; avoid microwaving.
