  • 1 lb Brussels sprouts, trimmed and halved
  • 2 firm apples (Honeycrisp or Granny Smith), cored and sliced into ½-inch wedges
  • 2 tablespoons extra virgin olive oil, divided
  • 1 tablespoon maple syrup
  • ½ teaspoon ground cinnamon
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh thyme sprigs (optional)
  • Red chili flakes (optional, for heat)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry thoroughly with paper towels. Season both sides generously with salt, pepper, garlic powder, and paprika. Let rest while prepping vegetables.
  3. In a bowl, toss the Brussels sprouts with a drizzle of olive oil, salt, and pepper until evenly coated.
  4. In a separate bowl, toss the apple wedges with 1 tablespoon olive oil, maple syrup, and ground cinnamon.
  5. Arrange the chicken thighs skin-side up on a large rimmed sheet pan, spaced apart to avoid crowding.
  6. Arrange the Brussels sprouts and apples around the chicken thighs, ensuring they are not piled on top of each other.
  7. Roast in the oven for 35-40 minutes. Halfway through (around 20 minutes), use tongs to turn the Brussels sprouts and apples for even browning. The chicken skin should be golden and crisp, and the internal temperature should reach 165°F (74°C).
  8. Optional: Broil for 2-3 minutes if the skin isn’t crispy enough, watching carefully to prevent burning.
  9. Remove from oven and let the chicken rest for 5 minutes before serving.

Pat chicken skin completely dry before seasoning to ensure crispiness. Avoid overcrowding the pan to prevent steaming. Toss vegetables halfway through roasting for even browning. Rest chicken after roasting to keep meat juicy. For extra heat, add red chili flakes before roasting. Leftovers reheat best in a 350°F oven for 10 minutes to maintain crisp skin.
