A quick and cozy sheet pan dinner featuring crispy bone-in, skin-on chicken thighs roasted alongside sweet-tart apples and tender Brussels sprouts, perfect for chilly autumn evenings.

  • 6 bone-in, skin-on chicken thighs (about 2 pounds / 900g)
  • 1 pound (450g) Brussels sprouts, trimmed and halved
  • 2 medium apples (preferably Honeycrisp or Granny Smith), cored and quartered
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons fresh thyme, chopped (or 1 teaspoon dried)
  • 3 cloves garlic, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon smoked paprika
  • 1 tablespoon honey or maple syrup (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim the ends off the Brussels sprouts, remove any yellow or damaged outer leaves, and slice them in half. Core the apples and cut into quarters, leaving the skin on.
  3. Toss Brussels sprouts and apples with olive oil, minced garlic, chopped thyme, salt, and pepper in a mixing bowl until evenly coated. Spread them out on a sheet pan in a single layer, leaving space for the chicken thighs.
  4. Pat the chicken thighs dry with paper towels. Season both sides with salt, pepper, and smoked paprika.
  5. Arrange the chicken thighs skin-side up on the sheet pan, nestled among the Brussels sprouts and apples. Drizzle a little olive oil over the chicken if desired, and brush honey or maple syrup over the apples for a caramelized glaze.
  6. Place the sheet pan in the oven and roast for 35-40 minutes. At 20 minutes, use tongs to turn the Brussels sprouts and apples for even roasting, but keep the chicken skin-side up.
  7. Check the chicken’s internal temperature; it should reach 165°F (74°C). The skin should be golden brown and crackly, Brussels sprouts tender with some charred edges, and apples soft but holding their shape.
  8. Remove from the oven and let rest for 5 minutes before serving.

Notes

Pat chicken skin dry thoroughly for best crispiness. Do not flip chicken during roasting to maintain crispy skin. Avoid overcrowding the pan to prevent steaming. If skin isn’t crispy enough, broil for 2-3 minutes at the end, watching closely to avoid burning. Let chicken rest 5 minutes after roasting to keep juices locked in.
