  • 8 ounces cream cheese, softened
  • 2 tablespoons fresh chives or green onion, finely chopped (optional)
  • 3 tablespoons everything bagel seasoning (poppy seeds, sesame seeds, dried garlic, onion flakes, coarse salt)
  • 1 large egg beaten with 1 tablespoon water (egg wash)

Instructions

  1. Activate the yeast by combining warm water and sugar in a small bowl. Sprinkle yeast over the top and let sit for 5-10 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Pour in the yeast mixture and olive oil. Mix until a shaggy dough forms.
  3. Knead the dough with a stand mixer dough hook on medium speed for 6-7 minutes or by hand on a floured surface for 8-10 minutes until smooth and elastic.
  4. Lightly oil a clean bowl, place the dough inside, cover with a damp towel or plastic wrap, and let rise in a warm spot for 1 hour or until doubled in size.
  5. Mix softened cream cheese with chopped chives or green onions if using and set aside.
  6. Punch down the risen dough and divide into about 16 equal pieces (about 1.5 ounces / 45g each). Flatten each piece into a disk, place about 1 teaspoon of cream cheese filling in the center, then fold dough around it, pinching edges to seal and rolling into a smooth ball.
  7. Brush each ball lightly with egg wash, then roll in everything bagel seasoning to coat evenly.
  8. Arrange bagel balls on a parchment-lined baking sheet about 1 inch apart. Let rest for 10-15 minutes while preheating oven to 375°F (190°C).
  9. Bake for 18-20 minutes until golden brown and crispy on the outside.
  10. Transfer to a cooling rack for 5 minutes before serving.

Be gentle when sealing the dough around the cream cheese to avoid leaks. Use egg wash to help seasoning stick and create a golden crust. Let dough balls rest before baking to relax gluten.
