A simple, forgiving 7-day guide to creating a bubbly, active sourdough starter from scratch using just flour and water. Perfect for beginners who want the result without the anxiety.

Ingredients

  • All-purpose flour (unbleached preferred)
  • Whole wheat flour (optional, for first few days)
  • Filtered or spring water

Instructions

  1. Day 1: In a clean jar, combine 60 grams of all-purpose flour and 60 grams of filtered water. Stir vigorously until no dry flour remains. Cover loosely with a cloth or coffee filter and secure with a rubber band. Place in a warm spot (70-75°F). Mark the starting height with a rubber band.
  2. Day 2: Discard half of the mixture (about 60 grams). Feed with 60 grams of fresh flour and 60 grams of water. Stir well, scrape down sides, mark new height, cover, and return to its spot.
  3. Day 3: Repeat discard and feed process: remove half, add 60 grams of flour and 60 grams of water, stir, and mark height.
  4. Day 4: Continue with the same discard and feed routine.
  5. Day 5: Continue feeding once a day, discarding half each time.
  6. Day 6: Continue with one feeding per day.
  7. Day 7: Feed one last time, wait until starter is at its peak (doubled and bubbly), and use in your favorite sourdough recipe. Store remaining starter in the fridge, feeding once a week.

Notes

Temperature matters: a warm spot (70-75°F) is ideal. Don’t overfeed; once a day is enough for the first week. Use the discard for pancakes, waffles, or crackers. Watch for hooch (grayish liquid on top) which means the starter is hungry. Be patient; some starters take 10-14 days to become fully active.
