These easy creamy veggie roll-up pinwheel sandwiches are quick, fresh, and perfect for parties or snacks. They combine a creamy herb spread with crisp veggies rolled in soft tortillas for a crowd-pleasing bite.

  • 8 ounces cream cheese, softened to room temperature
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh herbs (dill or parsley), finely chopped

  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • 1 medium cucumber, thinly sliced (about 150 grams / 5.3 oz)
  • 1 red bell pepper, thinly sliced (about 150 grams / 5.3 oz)
  • 1 small carrot, peeled and julienned (about 70 grams / 2.5 oz)
  • A handful of baby spinach leaves (about 30 grams / 1 oz)
  • Optional add-ins: finely chopped green onions or smoked paprika

Instructions

  1. In a mixing bowl, combine 8 ounces softened cream cheese with 1/4 cup Greek yogurt. Add 2 tablespoons finely chopped fresh dill or parsley, 1/2 teaspoon garlic powder, 1 teaspoon fresh lemon juice, 1/4 teaspoon salt, and a pinch of black pepper. Mix until smooth and creamy, about 3-5 minutes.
  2. Thinly slice the cucumber and red bell pepper into long strips about 1/8 inch thick. Peel and julienne the carrot into matchstick-sized pieces. Wash and pat dry a handful of baby spinach leaves.
  3. Lay one large flour tortilla on a clean rolling surface. Spread a thin, even layer (2-3 tablespoons) of the cream cheese mixture over the entire surface, reaching to the edges.
  4. Arrange the cucumber strips, bell pepper slices, carrot juliennes, and spinach leaves evenly on top of the spread, leaving about a half-inch border at the edge closest to you.
  5. Starting at the edge closest to you, roll the tortilla tightly away from you into a log, tucking in any loose veggies as you go. This should take 1-2 minutes per wrap.
  6. Wrap each rolled log tightly in plastic wrap or parchment paper. Refrigerate for at least 30 minutes to firm up.
  7. Unwrap the chilled rolls and slice into 1-inch rounds using a sharp serrated knife. Arrange on a serving platter and serve.

Soften cream cheese well before mixing to avoid lumps. Slice veggies thinly and uniformly for easy rolling. Chill rolls for at least 30 minutes before slicing to keep shape.
