Easy Crispy Sheet Pan Pork Chops with Roasted Garlic Potatoes

A quick and satisfying one-pan dinner featuring crispy pork chops and roasted garlic potatoes with a golden crust and tender interior.

  • 4 pork chops (bone-in or boneless, about 1-inch thick)
  • 1.5 pounds Yukon gold potatoes, cut into bite-sized chunks
  • 810 whole peeled garlic cloves
  • 2 tablespoons olive oil (extra virgin preferred)
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon smoked paprika
  • 2 teaspoons chopped fresh rosemary (or 1 teaspoon dried rosemary)
  • Optional: fresh lemon juice for finishing

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut potatoes into bite-sized chunks. Toss them in a bowl with olive oil, kosher salt, black pepper, smoked paprika, and chopped rosemary.
  3. Spread the seasoned potatoes evenly on one half of a large rimmed sheet pan. Nestle whole peeled garlic cloves among the potatoes.
  4. Pat dry the pork chops. Rub each with olive oil and season generously on both sides with salt, pepper, smoked paprika, and a pinch of rosemary.
  5. Place the pork chops on the other half of the sheet pan, leaving space between each chop.
  6. Roast in the oven for 20-25 minutes. Halfway through (around 12 minutes), flip the pork chops and stir the potatoes for even browning.
  7. Check that pork chops reach an internal temperature of 145°F (63°C) and potatoes are golden and tender.
  8. Let the pork chops rest for 5 minutes before serving. Optionally, squeeze fresh lemon juice over the dish.

Notes

Pat pork chops dry before seasoning to ensure crispiness. Let pork chops rest at room temperature for 15 minutes before cooking for even cooking. Toss potatoes halfway through roasting to prevent soggy spots. Optional broil potatoes for 2-3 minutes at the end for extra crispiness. Use a meat thermometer to avoid overcooking pork chops. Leftovers keep well refrigerated for up to 3 days; reheat in oven to maintain crispiness.
