A simple and comforting crockpot recipe featuring tender beef and vibrant broccoli in a perfectly balanced savory-sweet sauce, ideal for busy weeknights.

Ingredients

Scale
  • 1.5 pounds flank steak or sirloin, thinly sliced against the grain
  • 4 cups fresh broccoli florets (about 300g)
  • 1/2 cup low-sodium soy sauce (120ml)
  • 1/4 cup beef broth or water (60ml)
  • 2 tablespoons brown sugar
  • 2 tablespoons oyster sauce (optional)
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (for thickening)

Instructions

  1. Trim any excess fat and slice 1.5 pounds of flank steak thinly against the grain into strips about 1/4-inch thick.
  2. In a mixing bowl, whisk together 1/2 cup low-sodium soy sauce, 1/4 cup beef broth, 2 tablespoons brown sugar, 2 tablespoons oyster sauce, 1 tablespoon sesame oil, minced garlic, grated ginger, and black pepper until sugar dissolves.
  3. Place the sliced beef into the crockpot, then pour the sauce over it. Stir gently to coat the meat evenly.
  4. Cover and cook on low for 4 to 5 hours, or until the beef is tender but not falling apart. Avoid cooking longer than 6 hours to prevent mushy texture.
  5. About 30 minutes before serving, add 4 cups fresh broccoli florets to the crockpot. Stir to combine, cover, and cook on high for 20-30 minutes until broccoli is tender but still bright green.
  6. Stir the cornstarch slurry into the crockpot and cook for an additional 5-10 minutes on high until the sauce thickens to a glossy finish.
  7. Give the dish a final stir, taste, and adjust seasoning if needed. Serve immediately over steamed rice or alongside pasta.

Notes

Do not lift the lid frequently during cooking to avoid heat loss and extended cooking time. Avoid overfilling the crockpot to leave space for broccoli to steam. Slice beef thinly for tenderness. Add broccoli late to keep it vibrant and crisp. Stir in cornstarch slurry at the end to thicken sauce. Taste and adjust seasoning before serving.
