  • 1 tablespoon sesame oil (optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Salt and black pepper to taste
  • Optional garnish: sliced green onions, sesame seeds, fresh cilantro or parsley

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides lightly with salt and pepper.
  2. In a small bowl, whisk together the honey, low-sodium soy sauce, minced garlic, chicken broth, rice vinegar, and sesame oil until smooth.
  3. Place the chicken thighs in the bottom of your slow cooker in a single layer if possible. Pour the honey garlic mixture over the top, making sure each piece gets some sauce.
  4. Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours. Check internal temperature at the 3-hour mark on LOW; you want 165°F, but thighs can go to 185°F without drying out.
  5. When the chicken is done, use tongs to carefully transfer the thighs to a plate. Cover loosely with foil to keep warm.
  6. Pour the cooking liquid from the slow cooker into a small saucepan. Skim off any excess fat if desired.
  7. In a separate small bowl, whisk together the cornstarch and water until smooth. Bring the cooking liquid to a gentle simmer over medium heat, then slowly whisk in the cornstarch mixture.
  8. Continue simmering for 2 to 3 minutes, stirring constantly, until the sauce thickens to a glossy, syrupy consistency that coats the back of a spoon.
  9. Return the chicken thighs to the slow cooker or place them in a serving dish. Pour the thickened sauce over the top and gently toss to coat each piece. Let them sit for 5 minutes to absorb the glaze.
  10. Garnish with sliced green onions and sesame seeds just before serving.

For best results, cook on LOW for 4 hours to keep chicken tender and sliceable. Always taste the sauce before serving and adjust with a splash of vinegar or pinch of salt if needed.
