  • 4 ounces Brie, at room temperature
  • 3 ounces Manchego, sliced into thin wedges
  • 3 ounces Aged Gouda, cut into small cubes
  • 3 ounces Prosciutto, thinly sliced
  • 2 ounces Genoa Salami, sliced into thin rounds
  • 2 ounces Soppressata, sliced
  • 4–5 Dried Figs, halved
  • 1/4 cup Marcona Almonds
  • 1/4 cup Cornichons
  • 2 tablespoons Honey, preferably mild wildflower
  • 2 tablespoons Fig Jam or Membrillo
  • 1 small Crusty Baguette, sliced into thin rounds and lightly toasted
  • Handful of Seeded Crackers
  • Small bunch of Fresh Grapes, red or green
  • 1 Fresh Pear, sliced thin

Instructions

  1. Take the cheese out of the fridge 30 minutes before serving to bring to room temperature.
  2. Preheat oven to 375°F (190°C). Slice the baguette into 1/4-inch rounds and arrange on a baking sheet. Toast for 5-7 minutes until golden around the edges but still soft in the center. Set aside to cool.
  3. Halve the dried figs. Slice the pear into thin wedges and toss with a squeeze of lemon juice to prevent browning. Wash the grapes and leave them on the stem.
  4. Cut the manchego into thin triangles. Cut the aged gouda into small cubes, about 1/2-inch each. Leave the brie whole.
  5. Fold the prosciutto slices into loose ribbons. Roll a few slices of soppressata into little cylinders. Leave the genoa salami flat.
  6. Pour the honey into one small ramekin. Spoon the fig jam or membrillo into another. Place the cornichons in a third. Arrange these bowls on the board first as anchors.
  7. Place the brie in one corner of the board, the manchego wedges in another, and the gouda cubes in a third, leaving space between them.
  8. Arrange the prosciutto ribbons near the brie, the soppressata rolls near the manchego, and the salami slices near the gouda.
  9. Scatter the Marcona almonds in empty spaces. Tuck the dried fig halves and pear slices around the edges. Add the grapes in small clusters.
  10. Arrange the baguette slices and crackers along one edge of the board, slightly overlapping.
  11. Just before serving, drizzle a little honey over the brie and the gouda cubes.
  12. Step back and adjust the board, filling any empty spaces with extra almonds or crackers.

Notes

For best results, let cheese come to room temperature before serving. Do not overcrowd the board; leave breathing room between items. If serving outdoors in warm weather, keep the board in the shade. Leftovers can be stored separately: wrap cheeses in wax paper, meats in an airtight container, and baguette/crackers in a paper bag at room temperature.
