These easy fluffy blueberry lemon ricotta muffins are tender, moist, and bursting with fresh lemon zest and juicy blueberries, perfect for a quick and delightful breakfast or brunch.

  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (250g) whole milk ricotta cheese
  • ¾ cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • Zest of 2 medium lemons
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • ½ cup (120ml) milk, whole or 2%
  • 1 ½ cups (225g) fresh or frozen blueberries
  • Optional: Turbinado sugar or coarse sugar for topping

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a medium bowl, whisk the ricotta cheese with the granulated sugar until smooth.
  4. Beat in the eggs, lemon zest, lemon juice, and vanilla extract into the ricotta mixture until well combined and smooth.
  5. Pour the ricotta mixture into the dry ingredients. Add the milk and gently fold with a spatula until just combined; a few lumps are okay.
  6. Carefully fold in the blueberries, being gentle to keep them intact.
  7. Spoon the batter evenly into the muffin cups, filling each about 3/4 full. Sprinkle turbinado sugar on top if desired.
  8. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use fresh lemon zest and juice for best flavor. Do not overmix the batter to avoid tough muffins. Fold blueberries gently to keep them whole. Room temperature eggs and ricotta help with smooth batter and even rising. If batter is too thick, add a splash more milk. Toss blueberries in a tablespoon of flour before folding to prevent sinking.
