Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your mini muffin pan or line with mini paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt until well combined.
  3. In another bowl, whisk melted butter, vegetable oil, brown sugar, granulated sugar, eggs, vanilla extract, and milk until smooth.
  4. Pour the wet mixture into the dry ingredients and gently fold with a spatula until just combined; a few lumps are okay.
  5. Stir in mini chocolate chips or dried cranberries if using.
  6. Fill each mini muffin cup about 2/3 full using a teaspoon or mini scoop.
  7. Bake for 12-15 minutes, checking at 12 minutes with a toothpick; muffins are done when toothpick comes out clean or with a few crumbs.
  8. Let the muffin bites cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. Once cool, arrange muffin bites in a single layer on a parchment-lined baking sheet and freeze for about 1 hour.
  10. Transfer frozen muffin bites to a freezer-safe bag or container.
  11. To reheat, microwave 2-3 bites for 20-30 seconds or warm in a toaster oven until heated through.
