A simple and comforting summer dessert featuring fresh peaches topped with a buttery cinnamon crumble. Ready in about 45 minutes, it’s perfect for casual family dinners or backyard barbecues.

  • 6 cups fresh peaches, peeled and sliced (about 6 medium peaches)
  • 3/4 cup granulated sugar (150g)
  • 1 cup all-purpose flour (125g) for crumble
  • 1/2 cup all-purpose flour (65g) for batter
  • 1/2 cup packed brown sugar (100g)
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup unsalted butter (115g), cold and cubed for crumble
  • 1/4 cup unsalted butter (60ml), melted for batter
  • 1/2 cup milk (120ml), whole or 2% (almond milk optional for dairy-free)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and allow about 10 minutes to preheat.
  2. Peel, pit, and slice peaches into 1/2-inch thick slices. Toss with 1/2 cup granulated sugar and 1 teaspoon cinnamon. Let sit for 10 minutes to macerate.
  3. In a bowl, combine 1 cup flour, 1/2 cup brown sugar, 1 teaspoon cinnamon, and 1/4 teaspoon salt. Cut in 1/2 cup cold cubed butter until mixture resembles coarse crumbs.
  4. In another bowl, whisk 1/2 cup flour, 3/4 cup granulated sugar, baking powder, and a pinch of salt. Add milk, melted butter, and vanilla extract. Stir until just combined.
  5. Grease a 9×9-inch baking dish. Pour batter evenly into dish. Spoon peach slices with juices over batter gently. Sprinkle crumble topping evenly over peaches.
  6. Bake for 40-45 minutes until topping is golden brown and peach juices bubble. A toothpick inserted should come out mostly clean.
  7. Let cobbler cool for 10-15 minutes before serving.

Notes

Keep butter cold for best crumble texture. If crumble browns too fast, tent with foil halfway through baking. Peeling peaches improves texture. Do not overmix batter to avoid toughness. Grease baking dish to prevent sticking.
