Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Prepare the oat streusel topping: In a large bowl, combine 1 cup rolled oats, 1 cup all-purpose flour, 1/2 cup brown sugar, 1 teaspoon cinnamon, and a pinch of salt if using. Cut in 3/4 cup cold, cubed unsalted butter using a pastry cutter or fork until the mixture resembles coarse crumbs with some pea-sized pieces. Set aside about 1 1/2 cups of this mixture for the topping.
  3. Make the crust: Press the remaining oat streusel mixture firmly into the bottom of the prepared pan to form an even crust layer. Bake for 12-15 minutes until lightly golden. Remove from oven and let cool slightly.
  4. Prepare the peach filling: Peel and slice 4-5 fresh peaches to get about 4 cups of slices.
