This easy frozen yogurt bark with mixed berries is a quick, healthy treat that takes just five minutes of prep. A creamy Greek yogurt base is topped with mixed berries and granola, then frozen until solid for a refreshing summer snack.

Ingredients

Scale
  • 2 cups (480 ml) Greek yogurt, plain or vanilla
  • 2–3 tablespoons (30–45 ml) honey or maple syrup
  • 1 teaspoon (5 ml) vanilla extract
  • 1½ cups (225 g) mixed berries (strawberries, blueberries, raspberries, blackberries), fresh or frozen
  • ½ cup (60 g) granola
  • Optional toppings: shredded coconut, dark chocolate chips, chopped nuts, chia seeds, or melted peanut butter

Instructions

  1. Line a sheet pan with parchment paper, letting it extend slightly over the edges for easy removal.
  2. In a medium bowl, combine Greek yogurt, honey (start with 2 tablespoons), and vanilla extract. Stir until smooth and well combined.
  3. Pour the yogurt mixture onto the prepared sheet pan and spread into an even layer about ¼ to ½ inch (6-12 mm) thick.
  4. Scatter the mixed berries evenly over the yogurt layer. Gently press them into the yogurt so they are partially embedded.
  5. Sprinkle granola evenly over the top and press in gently. Add any optional toppings if desired.
  6. Drizzle with extra honey in a zigzag pattern if you want additional sweetness.
  7. Place the sheet pan in the freezer and freeze for at least 3-4 hours, or until completely solid (overnight is best).
  8. Once frozen, lift the parchment paper out of the pan. Place on a cutting board and break into irregular pieces using a sharp knife or by hand. Store in an airtight container or freezer bag.

Notes

Use full-fat or 2% Greek yogurt for the creamiest texture; nonfat yogurt can become icy. If using frozen berries, do not thaw them first to avoid excess liquid. For crunchier granola, add it just before serving instead of before freezing. The bark can be stored in the freezer for up to 2 weeks.
