Easy Lemon Herb Baked Salmon Dinner with Roasted Asparagus

A quick and easy baked salmon recipe infused with fresh lemon and herbs, paired perfectly with roasted asparagus for a healthy and flavorful dinner.

  • Salmon fillets, skin-on, about 6 ounces each (preferably wild-caught)
  • Fresh lemon, thinly sliced (for layering and zest)
  • Fresh herbs: thyme, rosemary, and parsley, roughly chopped
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste (flaky sea salt preferred)
  • 1 bunch asparagus (about 1 pound), trimmed
  • Optional: crushed red pepper flakes or smoked paprika
  • Optional substitutions: almond flour for light coating, dairy-free butter instead of olive oil, fresh dill or basil instead of thyme

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and trim tough ends off asparagus (about 1-2 inches). Toss asparagus with 1 tablespoon olive oil, salt, and pepper. Set aside.
  3. Pat salmon fillets dry with paper towels to remove excess moisture.
  4. In a small bowl, combine minced garlic, chopped thyme, rosemary, parsley, 1 tablespoon olive oil, salt, and pepper. Stir well.
  5. Place salmon fillets skin side down on a lined baking sheet or wire rack.
  6. Spread herb mixture evenly over each salmon fillet.
  7. Lay 2-3 thin lemon slices on top of each salmon fillet.
  8. Scatter seasoned asparagus around the salmon on the baking sheet, avoiding overcrowding.
  9. Roast in the oven for 12-15 minutes, until salmon flakes easily but remains moist and asparagus is tender with slight caramelization.
  10. Optional: Broil for 1-2 minutes for extra color, watching carefully to avoid burning.
  11. Serve salmon with asparagus, spoon pan juices over top, and add fresh lemon squeeze if desired.

Notes

Pat salmon dry to avoid steaming and ensure better texture. Do not overcrowd the pan for even roasting. Use fresh herbs for best flavor and texture. Watch oven time closely to avoid overcooking salmon. Let salmon rest a couple of minutes after baking to lock in moisture. For thicker asparagus, add halfway through cooking or reduce roasting time. Leftovers reheat best in oven or skillet, avoid microwaving.
