Sticky and slightly grainy peanut butter energy balls with chewy oats and dark chocolate chips, perfect for quick, healthy snacks without baking.

Ingredients

  • 1 1/2 cups rolled oats (135g)
  • 3/4 cup natural creamy peanut butter (190g)
  • 1/3 cup honey (113g) (can substitute maple syrup for vegan)
  • 1/2 cup dark chocolate chips (90g) (70% cocoa or higher)
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract
  • A pinch of sea salt

Instructions

  1. Measure and prep your ingredients.
  2. In a large bowl, combine the rolled oats, chia seeds, and sea salt. Stir to distribute evenly.
  3. Add the peanut butter, honey, and vanilla extract. Mix until the oats and chia seeds are fully coated and sticky, about 3-4 minutes.
  4. Fold in the dark chocolate chips gently to distribute evenly without melting.
  5. Scoop about a tablespoon (15ml) of the mixture and roll it between your palms to form tight balls. Wet hands slightly if mixture is too sticky. Yield about 15-18 balls.
  6. Place the energy balls on a parchment-lined baking sheet or plate and refrigerate for at least 30 minutes to firm up.
  7. Store in an airtight container in the refrigerator for up to one week or freeze for up to 3 months.

Notes

Use natural peanut butter for best binding. Pulse oats lightly if using a food processor to maintain texture. Chill hands before rolling to prevent sticking. Adjust sweetness and texture by adding more honey or oats as needed. Store chilled or frozen for longer freshness.
