  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a mixing bowl, combine 1 ½ cups rolled oats, 2 tablespoons ground flaxseed, and a pinch of salt. Stir until evenly blended (about 2 minutes).
  2. Add 1 cup natural peanut butter, ⅓ cup honey, and 1 teaspoon vanilla extract to the dry ingredients. Mix thoroughly until the mixture is sticky but manageable (3-5 minutes).
  3. Gently fold in ½ cup mini chocolate chips, distributing them evenly without overmixing.
  4. Scoop about 1 tablespoon of the mixture and roll it between your palms to form compact balls. If sticky, dampen hands with cold water. Yield is about 20-24 bites.
