  • 1 medium carrot, julienned or shredded
  • 1 small cucumber, thinly sliced or spiralized
  • 2 green onions, finely chopped
  • 1/4 cup chopped fresh cilantro or parsley (optional)
  • 2 tbsp toasted sesame seeds
  • 1/4 cup roasted peanuts or cashews, roughly chopped (optional)

Instructions

  1. Cook the noodles: Bring a large pot of water to a boil. Add 8 oz (225 g) of your chosen noodles. Cook according to package instructions—usually 3-5 minutes for rice vermicelli or soba. Drain immediately and rinse under cold water to stop the cooking and cool the noodles.
  2. Prepare the dressing: In a medium mixing bowl, whisk together 3 tbsp soy sauce, 2 tbsp toasted sesame oil, 1 tbsp rice vinegar, 1 tbsp honey, 1 tsp grated ginger, 1 minced garlic clove, and 1 tbsp tahini or peanut butter until smooth and creamy. Add a teaspoon of warm water if the dressing is too thick.
  3. Prep the vegetables: Julienne or shred 1 medium carrot, thinly slice 1 small cucumber, finely chop 2 green onions, and roughly chop fresh cilantro or parsley if using.
  4. Toss noodles with dressing: Place the cooled noodles into a large mixing bowl. Pour the dressing over them and toss gently but thoroughly to coat every strand.
  5. Add veggies and mix: Fold in the prepared carrot, cucumber, and green onions. Toss again gently to combine without crushing the noodles.
  6. Pack the bento: Portion the noodles and veggies into your lunch container. Sprinkle toasted sesame seeds and chopped nuts on top.
  7. Chill or serve: Enjoy immediately or chill in the fridge for 30 minutes to meld flavors. Serve cold or at room temperature.
