  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, mash 3 medium ripe bananas with a fork until mostly smooth with some small lumps.
  3. Add ½ cup melted and slightly cooled unsalted butter to the bananas and stir gently until combined.
  4. Mix in ¾ cup granulated sugar, 1 large egg, and 1 teaspoon vanilla extract until well blended, about 1 minute. Do not overmix.
  5. In a separate bowl, whisk together 1 ½ cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt.
  6. Slowly add the dry ingredients to the banana mixture and fold gently with a wooden spoon or spatula until just combined. Batter will be thick and a little lumpy.
  7. Fold in ¾ cup chocolate chips evenly into the batter.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 55-60 minutes, starting to check at 50 minutes by inserting a toothpick into the center. It should come out clean or with a few moist crumbs.
  10. Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas for best flavor and moisture. Do not overmix the batter to avoid tough bread. If the top browns too fast, tent with foil for the last 10-15 minutes. Let the bread cool completely before slicing to prevent crumbling. You can substitute half the sugar with brown sugar or honey for a healthier option. Almond flour can be used for gluten-free adaptation, and coconut oil or vegan butter can replace butter for dairy-free or vegan versions.
